The good news is eggplant is easy to prepare and can take on a variety of flavors and textures with its magical adaptable qualities. It’s no wonder cooks across the globe love it — you can find eggplant used in cuisines from Italy to Japan, and everywhere in between! In this hands-on cooking class, licensed dietitian (and good cook, to boot), Ranelle Kirchner, will show you the basics of how to prepare eggplant with ease using delicious recipes from four different regions around the world.
