Get to Know Your Roots

This class shines a light on vegetables grown beneath the soil: roots! Hardy storage crops like potatoes, carrots, and parsnips are what sustains any locavore through the long Minnesota winter, but that doesn’t mean they have to get boring. In this hands on class with cooking instructor, and registered dietician, Ranelle Kirchner, you’ll learn how to prepare a variety of root vegetables using different and unique preparations that are packed with flavor.
Class menu will include:
- Potato Rosti with Beet Horseradish
- Yucca fries with Red Pepper Hummus
- Curried Parsnip and White Bean Soup
- Vegan Carrot Waffles
