Tiger Bite: Old Methods in a New Land

Yia Vang of Union Kitchen MN is on a mission to forge old school Hmong flavors and techniques with new school ideas and local ingredients. Yia is a master storyteller, whether using words or food, and in this class he’ll tell you the story of the complete Hmong dinner. In every Hmong meal, there are four main elements: rice, protein (usually some kind of meat), broth (or some kind of veggie in broth), and the most important part–pepper sauce. Any true Hmong meal is not complete unless there is a hot pepper sauce on the table. There are an endless variety of hot sauces, but in this class Yia will teach you the one that has become his signature: Tiger Bite Hot Sauce. You’ll enjoy your hot sauce with sticky rice and char siu chicken.
