West African Fusion: Fufu Tacos

$65.00Minnesota is home to a significant West African community and while the influence of West African cuisine can be seen at restaurants, stores, and farmers markets around town, many of us are still unfamiliar with the ingredients, techniques, and recipes that define this cuisine. One of the cornerstones of West African cuisine is fufu. Fufu consists of starchy foods, often cassava, that have been boiled, pounded, and made into balls before being dipped into sauces or eaten with various stews. Fufu is eaten across Liberia, Sierra Leone, Côte D’ Ivoire, Nigeria, Ghana, Togo, Benin, and more, including countries in the Caribbean. In this class, Chef Chauncy Yarngo will share his story of marrying the cuisine of his native Liberia with his journey as a chef in the U.S., resulting in his own unique fusion. You’ll work together in class as you learn how he takes a dish like fufu and transforms it into something as familiar as a taco while showcasing the signature flavors and ingredients of West Africa.
