For you mushroom lovers out there, try out some varieties that aren’t as commonly found in stores or at markets! Forage North, a renter at TGA, has Black Trumpet and Hedgehog mushrooms for your tastebuds’ delight! Forage North is a certified and licensed forager. Please have your orders in by end of the day on Monday.
Black Trumpet (Craterellus species)
Black Trumpets have a smoky flavor with notes of overripe apricot. They can be cooked as a side, but also shine when incorporated into a cream sauce. Black Trumpet also dehydrate well, which further intensifies their flavor.
Hedgehog (Hydnum species)
Hedgehog are a firm, meaty flavored mushroom. Small specimens should try to be kept whole. A great replacement for Chanterelles, Hedgehog are versatile and a great beginner mushroom for those new to foraged mushrooms.
*Wild Mushrooms should not be consumed raw. Wild Mushrooms should be stored in a breathable container with a damp paper towel over them, or in a paper bag.
Although Forage North makes every effort to harvest clean mushrooms, they are a product of the woods and may have dirt, debris, or bugs on their surface. Visible debris may be removed with a paring knife. Your mushrooms can also be gently rinsed immediately before use.
