Hmong Sausage with Marinated Veggies

Serves 4
Marinated Veggies:
- 2 tablespoons sugar
- 2 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1 bunch radishes, trimmed and thinly sliced
- 1 – 1-1/2 cups bean sprouts, washed
- salt and ground black pepper to taste
Grilling Ingredients:
- 1 tablespoon sugar
- 3 tablespoons soy sauce
- 3 tablespoons sesame oil
- 3 tablespoons avocado oil
- 1/2 pound of shiitake mushrooms, stems removed
- 4 Hmong sausages
To serve:
- your preferred grain, like white rice, sticky rice, brown rice, or quinoa
- scallions, chopped
- chili oil
Directions:
- Cook the grain: Prepare your grain according to the directions on the package.
- Make the marinated veggies: In a medium-sized bowl, combine sugar, rice vinegar, and sesame oil to create the marinade. Stir until sugar dissolves. Toss in sliced radishes and bean sprouts to coat evenly in marinade. Set aside.
- Prep the glaze: In a small bowl, mix together sugar, soy sauce, sesame oil, and avocado oil to create a glaze for the shiitake mushrooms. Stir until sugar dissolves.
- Grill proteins: Start by cooking Hmong sausages on a pre-heated grill. Flip halfway through, about 5-6 minutes. Add shiitake mushrooms* and brush them with the glaze. Grill until proteins are fully cooked. About a total of 4-6 minutes for mushrooms and 10-12 minutes for sausages.
- Garnish and serve: Serve immediately over your favorite grain. Garnish with chopped scallions and chili oil.
*Notes:
- Using a grilling basket can help cook small pieces of shiitake mushrooms.
- This recipe can be accommodated for vegetarians by omitting the Hmong sausage and increasing the amount of mushrooms and glaze.
- Get adventurous and add chili oil to the marinated veggies! You can even substitute the veggies with other crunchy classics, like cucumbers and carrots.
